Matcha powder is an ultra-fine powder made from sun shading tea as raw material and then ground by a Matcha grinder. The pursuit of high-end matcha powder is green. The greener the powder, the higher its value, and the greater the difficulty in making it. There will be stricter requirements for tea varieties, planting methods, planting areas, processing techniques, and processing equipment. Varieties such as Hebei, Zhongcha 36, and Aolv are particularly green in color. If combined with a greenhouse shading, the color and taste of the produced matcha will be particularly good, making it a raw material for high-end matcha.
The raw material of Matcha is ground tea, which is only made from spring tea. In addition to strict fertilizer and water management, its production has two keywords: coverage and steaming. The studies of Japanese scholars Shinjin Xiu and Tomiko Umei respectively indicate that during the steaming process, the oxidation of cis-3-hexenol, cis-3-hexene acetate, and linalool in tea increases significantly, and a large number of violone compounds such as A-violone and B-violone are produced. The precursors of these aroma components are carotenoids, which constitute the special aroma and taste of Matcha.
